Blue Ribbon Recipe

This rustic chicken cacciatore recipe is fabulous. It sounds fancy but is actually a very easy to prepare dinner. With its robust flavor and a hint of oregano, we loved the tomato wine sauce. Ingredients

  • 1 c
    onion, chopped
  • 1 c
    bell pepper, chopped
  • 3
    garlic cloves, minced
  • 3 Tbsp
    olive oil
  • 2 can(s)
    stewed tomatoes, 14.5 oz each
  • 2 tsp
    oregano
  • 2 tsp
    salt
  • 1
    bay leaf
  • 3 lb
    chicken, cut into large pieces
  • 3/4 c
    red wine
  • 1/2 Tbsp
    black pepper

How to Make Chicken Cacciatore

Step-by-Step

  1. Heat oil in a large saucepan. Brown chicken on all sides. Remove chicken and drain off grease, leaving 1 tablespoon.
  2. Add onion, bell pepper, and garlic to pan. Saute until onion is tender.
  3. Stir in tomatoes, wine, oregano, salt, pepper, and bay leaf.
  4. Add chicken back to pot and bring to a boil. Reduce heat, cover, and simmer about 45 minutes or until chicken is tender.
  5. Discard bay leaf and serve over hot cooked spaghetti.
