Family loves these for snacks or breakfast on the go! Easy to make just a little planning needed. Had the recipe for years, lost it, found it again on Allrecipes.

Ingredients For overnight oatmeal muffins
- COMBINE, COVER AND REFRIGERATE OVERNIGHT:

2 cbuttermilk

- IN THE MORNING ADD:

1 2/3 cwheat flour

1 cbrown sugar, lightly packed

1/4 cvegetable oil

1 tspbaking powder

1 tspbaking soda

1 tspsalt

2eggs
- THESE INGREDIENTS ARE OPTIONAL:

1 craisins

1 cchopped pecans
How To Make overnight oatmeal muffins

1Bake in greased muffin pans or line with muffin liners. (I don't do this as they stick to the paper badly) Bake at 350F for 15-17 minutes. This makes almost 2 dozen muffins.
