This recipe makes the most flavorful, moist banana muffins I have ever eaten. And I have eaten a lot of banana muffins! I think you will agree. And the bonus is that they are so easy to make. I like to keep ripe bananas in Ziploc bags in the freezer so I can make a batch whenever I get the urge to. These muffins also freeze very well.

This is a very simple and flavorful banana muffin recipe. It's tender, light and fluffy. Not dense like regular banana bread. It's a great base recipe if you want to incorporate other add-ins like chocolate chips or nuts. Yum!

Ingredients For banana muffins

  • 1/2 c
    butter (1 stick)
  • 1 c
  • 2
  • 3
    ripe bananas
  • 1 1/4 c
    all-purpose flour
  • 1/2 tsp
    baking soda

How To Make banana muffins

  • Coating a muffin tray with non-stick spray.
    Preheat oven to 350 degrees. Coat a 12-cup muffin tin with cooking spray.
  • Butter and sugar in a bowl.
    In a large bowl, beat butter and sugar until creamy.
  • Eggs added and beaten until light and fluffy.
    Add eggs and beat until light and fluffy.
  • Stirring in bananas.
    Stir in bananas; mix well.
  • Mixing in flour and baking soda.
    Add flour and baking soda.
  • Mixing batter until flour is just combined.
    Mix just enough to moisten.
  • Batter spooned into muffin tins.
    Spoon batter into muffin cups.
  • Banana bread muffins baked.
    Bake 25 to 30 minutes or until a toothpick inserted in center comes out clean.
