10 - 12flour tortillas, heated between two moist paper towels until pliable.
How to Make Combination Burritos
- In a large non-stick frying pan, break up the ground beef and add onion, garlic, Jalapeno pepper, coriander and cumin. Break up the ground beef with a wooden spoon and cook until it is no longer pink and the onions are beginning to get tender.
- Add the refried beans and the water; stir and cook until well heated. Add 1 cup of the shredded cheese and heat until melted.
- Tear off a piece of wax paper of aluminum foil and lay 1 tortilla in the middle. Spoon 2 tablespoonfuls of meat mixture down the center of the tortilla. Sprinkle some more cheese on the meat. Fold one side of the tortilla over the meat and pull it tight against the meat; fold each end up towards the middle and continue rolling into a burrito. Wrap the tortilla in the wax paper or foil and place seam down in a warm, covered pan.
- These are great served with Spanish rice corn chips and pica de gallo (see my Pica de Gallo recipe on this site).
