These are so easy and so good. These are also gluten free and feeds a crowd. My kids even ate the spinach. Sort of a clever take on green eggs and ham.

  • 2Spray muffin tin with cooking spray
  • 3Press a slice of ham into each muffin cup
  • 4Evenly distribute spinach between muffins cups
