blackberry cobbler
I spent a lot of time with my grandparents in Geneva, Alabama. Summer in the South means heat, but also blackberries. My grandmother would send me out to pick berries with a bucket to fill. As she walked me out, she would admonish me to “be particular for snakes, Shug.” I loved picking the berries. I’m not sure what part of it I enjoyed. Was it the freedom of being responsible to have a job to pick the berries for cobblers and jelly? Was it the challenge of seeing how quickly I could fill my bucket? Or was it that I loved the smell of them as they cooked away in her kitchen?
Blue Ribbon Recipe
During summer, when blackberries are abundant, there's nothing better than a fresh blackberry cobbler. If you grew up picking blackberries in the summer, then this cobbler recipe will bring back childhood memories. The blackberries are slightly tart. But there's just enough sugar to make this a delicious summer treat. When baking, the crust bakes around the fruit and is slightly crisp with juicy blackberries throughout. A scoop is amazing with a big scoop of vanilla ice cream.
Ingredients
- 1 stick butter
- 2 cups blackberries
- 1/4 cup water
- 1/2 cup granulated sugar
- 1 tablespoon fresh squeezed lemon juice
- 1 tablespoon corn starch
- 2 tablespoons water
- 1 cup milk
- 1 cup granulated sugar
- 1 cup self-rising flour
- 1 tablespoon granulated sugar
- 1 teaspoon ground cinnamon
How To Make blackberry cobbler

Step 1Preheat oven to 350 degrees F. Place a stick of butter in a 2.5 quart baking dish. Place it in the oven for the butter to melt while the oven heats up.

Step 2Add blackberries, water, 1/2 cup sugar, and lemon juice to a small pot. Bring to a quick boil and stir.

Step 3Once the blackberries come to a boil, mix 2 Tbsp of water with 1 Tbsp of corn starch to make a slurry. Add it to the blackberry mixture and cook until thickened. Remove from the heat and set aside.

Step 4Mix milk, sugar, and self-rising flour. Whisk until well mixed.

Step 5Once the butter is melted, remove the dish from the oven. Pour the batter over the butter evenly, but do not mix together.

Step 6Spoon the berry mixture evenly over the top; do not mix.

Step 7Mix together 1 Tbsp of sugar with 1 tsp of cinnamon. Sprinkle over the top of the cobbler. Bake for 45 minutes.

Step 8Remove the cobbler from the oven. Allow to cool for about 10 minutes.

Step 9Serve with ice cream or whipped cream.
