This is my most requested summer side dish.it's ideal for outdoor occasions and can be served warm or cold.

3 lbsmall red potatoes,halved

2 tbspolive oil

1/2 tspsalt / 1/4-tsp pepper

1 lagsweet yellow pepper,chopped

1 medred onion,halved,sliced

1 medcuccumber,chopped

1 1/4 cupsgrape tomatoes,halved

1/2 lbmozzarella cheese.cubed

3/4 cupgreek vinaigrette

1/2 cupkalamata (greek) olives

1 can2- 1/4 oz sliced ripe olives,drained

2 tbspminced fresh oregano

1DRIZZLE POTATOES WITH OIL AND SPRINKLE WITH SALT AND PEPPER;TOSS TO COAT.GRILL POTATOES,COVERED,OVER MED HEAT FOR 20-25 MIN OR UNTIL TENDER.

2PLACE IN A LARGE BOWL.ADD THE REMAINING INGREDIENTS;TOSS TO COAT. SERVE SALAD WARM OR COLD.
