Found this recipe years ago in the "Texas Country Reporter Cookbook". It is sooooo easy and soooo delicious!! One of my family's favorites!!

Ingredients

  • 1
    white onion, choppped
  • ·
    vegetable oil
  • 1 pkg
    8 oz cream cheese
  • 1
    chicken, cooked, de-boned and cubed
  • 1 pkg
    flour tortillas
  • 1 pkg
    8 oz monterey jack cheese
  • 1/2 pt
    whipping cream

How to Make Mary Louise's Chicken Enchiladas

Step-by-Step

  1. Saute onion in a small amount of oil. When onions are transparent, add cream cheese and cubed chicken. Stir until cheese is softened and well mixed. Put about 1/4 to 1/2 c. of chicken mixture on each flour tortilla and roll. Place in a greased casserole dish. Generously cover rolled enchiladas with grated cheese. Pour whipping cream over enchiladas and cover with aluminum foil. Bake at 325* for 30 minutes.
