This is a great recipe for feeding a lot of folks or for feeding a few and having leftovers. The celery gives some crunch, and the Panko crumbs and cheese browned on top add a ton of flavor. Enjoy!!

This is a different spin on the traditional chicken casserole, and it's tasty. Diced green bell pepper, celery, and onion add freshness to the dish. There's just enough creamy sauce for the delicate angel hair pasta to absorb. Cheese and Panko crumbs on top add a satisfying crunch once baked. Pair it with a crisp salad, and you've got one satisfying weeknight dinner.

Ingredients For chicken spaghetti casserole

  • 8 oz
    angel hair pasta
  • 2 lg
    chicken breasts, cooked and cubed
  • 4 oz
  • 1 c
    onion, diced
  • 1 c
    celery, diced
  • 1 c
    green bell pepper, diced
  • 2 Tbsp
    unsalted butter
  • 2 can
    cream of chicken soup (10.5 oz each)
  • 1 tsp
    Kosher salt
  • 1/2 tsp
    black pepper
  • 14 1/2 oz
    chicken broth
  • 2 c
    shredded cheddar cheese
  • 1 c
    Panko bread crumbs
  • 3 Tbsp
    butter, softened

How To Make chicken spaghetti casserole

  • Cubed chicken cooking in a skillet.
    In a large skillet, cook cubed chicken. Preheat oven to 425 F. Also, cook spaghetti in boiling water according to directions.
  • Sauteeing onion, celery, and bell peppers in butter.
    Remove chicken from pan and cook diced onion, celery, and bell pepper in 2 Tbsp of butter until tender.
  • Pimentos, creamed soup, chicken broth, salt, and pepper added to skillet.
    Add to the pan the pimentos, 2 cans of soup, chicken broth, salt, and pepper. Stir until combined.
  • Stirring in cooked chicken.
    Add the chicken to the mixture.
  • Folding in cooked pasta.
    Fold in the cooked pasta.
  • Mixture poured into a baking dish.
    Place in a 9x13 baking dish.
  • Mixing together Panko crumbs and cheddar cheese.
    Stir shredded cheese and Panko crumbs together.
  • Cheese spread over mixture and butter added.
    Spread on top. Dot with 3 Tbsp of butter.
  • Baking the chicken spaghetti casserole.
    Bake for 15-20 minutes or until golden. Serves 8-10.
