Ingredients

  • 4 c
    red cabbage, shredded
  • 1 Tbsp
    vinegar
  • 4
    chicken breasts, boneless and skinless
  • 1 Tbsp
    butter
  • 1 Tbsp
    cornstarch
  • 1 c
    milk
  • 1 Tbsp
    dill, fresh
  • 1/2 tsp
    chicken bouillon granules

How to Make Chicken & Red Cabbage

Step-by-Step

  1. Combine cabbage and vinegar in medium bowl; toss gently to coat.
  2. Place in a shallow 2 quart casserole coated with cooking spray.
  3. Arrange chicken over cabbage with thickest portions towards outside and cover with plastic wrap, turning back 1 corner to vent.
  4. Microwave on high 8 minutes; let stand covered 5 minutes.
  5. Melt butter in a 2 cup glass measure.
  6. Add milk, cornstarch, dillweed and bouillon granules; stir well.
  7. Microwave on high 3-4 minutes OR until thickened, stirring after 2 minutes.
  8. Serve with cabbage on bottom, then chicken and sauce over chicken. Garnish with dill sprigs.
