Ingredients

  • 2 lb
    chicken breasts, boneles, skinless and cut in 1 1/2" chunks
  • ·
    flour
  • ·
    "just a pinch" of salt
  • ·
    "just a pinch" of pepper
  • 1/4 c
    olive oil
  • 2 large
    garlic cloves, minced
  • 1 tsp
    dried oregano
  • 14 oz
    artichoke hearts, drained and halved
  • 3 Tbsp
    lemon juice
  • 1 c
    water
  • 1/4 c
    parsley, fresh and chopped

How to Make Chicken Lucia

Step-by-Step

  1. Season the flour with salt and pepper and dredge chicken in flour mixture.
  2. Heat the oil and garlic in a large skillet; When hot, add the chicken.
  3. Sprinkle with oregano and simmer over medium-high heat 3 to 4 minutes.
  4. Add the artichoke hearts, drizzle with lemon juice and add water.
  5. Cover and simmer until the chicken is done, 5 to 10 minutes, adding parsley in the last couple of minutes.
