Ingredients

  • 1.5 c
    zucchini, cut into 1/4 inch slices
  • 1 small
    onion, thinly sliced and separated into rings
  • 1 small
    tomato, cut in wedges
  • 2 Tbsp
    olives, pitted and sliced
  • 2 Tbsp
    parsley, fresh and chopped
  • 1 Tbsp
    basil, fresh chopped
  • tsp
    garlic powder
  • 1 medium
    chicken breasts, halves, boneless and skinless
  • 1 tsp
    butter

How to Make Chicken and Vegetable Casseroles

Step-by-Step

  1. In a large bowl stir together zucchini, onion, tomato, olives, parsley, basil and garlic powder.
  2. Divide evenly between 2 individual casseroles or au gratin dishes; top with a chicken breast half. Dot with butter.
  3. Sprinkle chicken breast halves with 1/8 teaspoon salt and 1/8 teaspoon pepper.
  4. Bake, covered, in a 350 oven about 40 minutes or until chicken is no longer pink.
