    green onions, diced
  • 2 Tbsp
    lime juice
  • 1/4 tsp
  • 2 c
    chicken, cooked and chopped
  • 1 c
    peas, cooked
  • 1 c
  • 1/4 c
    carrots, chopped
  • 1/4 c
    celery, chopped
  • 1/4 c
  • 3 Tbsp
    orange juice
  • 1/2 tsp
  • 1/2 tsp
    cinnamon, ground
  • 1/4 tsp
  • ·
    lettuce leaves
  • 3
    oranges, peeled, sectioned, and seeded
  • 2
    avacados, cut in wedges

How to Make Chicken and Orange Salad


  1. Sprinkle the scallions with the lime juice and 1/4 teaspoon salt; cover and refrigerate.
  2. Mix the remaining ingredients except the lettuce, oranges and avocados and refrigerate at least 1 hour.
  3. Spoon chicken mixture onto lettuce.
  4. Garnish with oranges and avocados; sprinkle with scallions.
