  • 1 Tbsp
  • 3/4 c
    onion, chopped
  • 1/2 c
    green bell pepper, chopped
  • 3 c
  • 1 c
    chicken broth
  • 5/8 tsp
  • 1.25 c
    instant mashed potato flakes
  • 3 Tbsp
    blue cheese, crumbled
  • 1/3 c
    cheddar cheese, grated

How to Make Cheese Potato Chowder


  1. In medium saucepan, melt butter.
  2. Add onion and green pepper.
  3. Cook and stir until softened, about 5 minutes.
  4. Stir in milk, chicken broth and black pepper.
  5. Bring to a boil.
  6. Stir in potato flakes.
  7. Cook and stir until thickened, about 1 minute.
  8. Set aside 1 tablespoon each cheddar and blue cheese for later use.
  9. Stir in remaining cheddar and blue cheeses.
  10. Heat until melted, about 1 minute.
  11. Just before serving, sprinkle with reserved cheddar and blue cheeses.
