    all purpose flour
  • 1 tsp
    baking powder
  • 1 tsp
    baking soda
  • 2 tsp
    pumpkin pie spice
  • 1 tsp
    ground cinnamon
  • 1/2 tsp
    kosher salt
  • 1/2 c
    butter, softened
  • 1 c
    granulated sugar
  • 1/2 c
    light brown sugar
  • 1/2 tsp
    pure vanilla extract
  • 1 c
    pumpkin, canned (not pie filling)
  • 1
    egg
  • 1 1/2 c
    white chocolate chips

How to Make White Chocolate Pumpkin Spice Cookies

Step-by-Step

  1. Preheat oven to 350 degrees. Whisk the flour, baking powder, baking soda, cinnamon, pumpkin pie spice and salt in a medium bowl; set aside.


    In the bowl of a stand mixer, fitted with a paddle attachment, cream the butter and sugars. Add the pumpkin, egg, and vanilla and combine thoroughly. Slowly add the dry ingredients. Drop on a cookie sheet lined with parchment paper.


    Bake for 10-12 minutes in the preheated oven. Cool for a couple minutes on the cookie sheet The recipe makes 36 small cookies or 18 large cookies.
