Baked potatoes should be baked between 40-60 minutes. This is a adopted recipe. I love baked potatoes,always a fast and easy meal and always filling.

Ingredients

  • 4 large
    baking potato
  • 2 c
    carrots, scrubbed and finely diced
  • 1 c
    onions, finely chopped
  • 2 tsp
    olive oil
  • 1/2 tsp
    basil
  • 1/4 c
    parsley, fresh sprigs
  • ·
    "just a pinch" of salt
  • ·
    "just a pinch" of pepper
  • ·
    chives, fresh/chopped

How to Make Carrot-Stuffed Baked Potatoes

Step-by-Step

  1. Preheat oven to 400 degrees.
  2. Scrub potatoes well, dry, pierce with fork in several places.
  3. Set potatoes in 400 degree oven to bake.
  4. Cook carrots and onions until tender, drain.
  5. Remove potatoes from oven when done.
  6. When cool enough to handle scoop out potato meat.
  7. Mash potato meat and carrots together.
  8. Add seasonings.
  9. Spoon mixture back into potato shells.
  10. Top with chives and parsley.
