  • 4 oz
    deli roasted chicken breast,chopped or 1 cup
  • 2 tbsp
    finely chopped red onion
  • 1/4 tsp
    dried thyme
  • 1/4 tsp
    ground allspice
  • 6 cups
    tortilla chips
  • 1 1/2 cups
    shredded monterey jack cheese with jalapeno peppers
  • 1 med
    mango,seeded,peeled and chopped
  • 1 tbsp
    chopped parsley (optional)

How to Make 'Caribbean Chicken Nachos'


  1. Preheat oven to 350'f.in a small bowl,toss together chicken,onion,thyme and allspice.
  2. spread chips on 11 by 12 inch ovenproof platter or Ungreased baking sheet. sprinkle chicken mixture over chips.top with cheese.bake 5-7 min or until cheese melts.
  3. Top with mango and parsley.serve immediately.
