I grew up with this on every holiday table and have made it a staple to this day at Thanksgiving and Christmas. Easy, quick dish to make the day before, adding cracker crumbs just before you pop it into the oven.

Ingredients

  • 2 pkg
    frozen chopped broccoli
  • 1 can(s)
    cream of mushroom soup
  • 1 1/2 c
    cheddar cheese, shredded
  • 1/4 c
    onion, finely chopped
  • 2
    eggs, well beaten
  • 1 c
    mayonnaise
  • 1 - 2 tsp
    lemon pepper, to taste; salt, optional
  • 2 c
    Ritz crackers, crushed

How to Make Broccoli Casserole

Step-by-Step

  1. Cook chopped broccoli according to package directions; drain.
  2. In large bowl, combine cooked broccoli and remaining ingredients, except cracker crumbs.
  3. Pour into lightly greased glass casserole dish.
  4. Top with crushed crackers.
  5. Bake 20-30 minutes at 350 degrees.
