I love blueberries! This is a great recipe for a morning brunch.
ONe of my favorites.

  • 1/3 c
    + 1 tablespoon vegetable oil
  • 3/4 c
  • 1
  • 1 1/2 c
  • 2 1/2 tsp
    baking powder
  • 1/4 tsp
  • 1 tsp
  • 1/2 c
  • 1 lb
    frozen blueberries (a little over 3 cups)
  • ·
    topping ingredients
  • 1/4 c
  • 1/4 c
    brown sugar
  • 1/2 c
  • 1/2 tsp
  • 3 Tbsp
    butter, melted

How to Make Best Blueberry Coffeecake


  1. Place vegetable oil & 3/4 cup sugar in mixing bowl and cream together using wire whisk on low speed of mixer for 10 to 15 minutes.
  2. Add eggs and vanilla, mix on medium speed for 5 minutes until light and fluffy.
  3. Sift together flour, baking powder and salt.
  4. While mixing on low speed add sifted dry ingredients alternately with milk. Mix for 2 minutes.
  5. Spread in light greased 2-quart oblong baking dish. (Batter will be very thick)
  6. Sprinkle 1 pound frozen blueberries over the top of batter.
  7. Mix remaining flour, brown sugar, sugar, cinnamon and melted butter until crumbly.
  8. Sprinkle topping over blueberries.
  9. Bake at 350 degrees for 55 minutes or until done.
