BEEF TOMATO W/TOFU AND UDON - Another japanese flavorful brothy dish

Here is another one of my favorite "comfort foods". When I make this dish and sit down on my recliner to eat, I can just feel a great big hug from everyone that is also eating this. I created this dish when I was a brand new mommy. Udon is a japanese thick white smooth noodle about 4-8mm thick. It is made from wheat flour, salt and water. Kids usually like to eat noodles here in the islands and so this tasty dish was made with my keikis (children) in mind. They have now learned how to make this for their children who love to eat it, too! I hope that you give it a try and can feel the love, too!

  • 2 c
    shoyu (soy sauce)
  • 2 c
  • 1 1/3 c
    granulated sugar
  • 2 lb
    chopped steak
  • 1
    medium round onion, sliced thin
  • 3
    tomatoes, cut into wedges
  • 1
    green bell pepper, cleaned and sliced
  • 3-4 pkg
    udon noodles
  • 1
    container tofu, diced into 1 inch cubes

  1. In a large pot, add the shoyu, water and sugar and bring to a boil to dissove the sugar.
  2. Add in the chopsteak and round onions, then add in the tomatoes, and green bell pepper. Let simmer for 25 minutes, covered.
  3. Put in the udon noodles and tofu, cover and let simmer for 15 more minutes. Serve hot, into individual bowls. Enjoy!
