Found this recipe in a American Profile insert in our newspaper. It was a big hit at a party my sister had.

I'm not generally a fan of mayonaise based salads but, this has to be my new favorite. Great flavor and definitely tastes better made a day before. Just add a little more mayo before serving if you feel it's a little dry. I think the dried cherries and chives really make this dish.

I'll be making this for the adults at my son's birthday party. Since it will be outside and I won't have access to electricity I thought this would be great. I'm just going to make sandwiches on kieser rolls and set them in a cooler for people to help themselves.

Ingredients

  • MARINADE FOR CHICKEN

  • 2 Tbsp
    olive oil
  • 1 Tbsp
    balsamic vinegar
  • 2 clove
    garlic, minced
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper
  • 1/2 tsp
    onion powder
  • 1 tsp
    italian seasoning
  • 1 1/2 lb
    chicken breasts, boneless and skinless
  • SALAD WITH DRESSING

  • 1 c
    celery, diced
  • 1/4 c
    red onion, diced
  • 1/2 c
    dried cherries
  • 1/2 c
    light mayo
  • 1 Tbsp
    creole mustard (i used dijon mustard)
  • 1 Tbsp
    chives, chopped
  • 1/4 tsp
    salt
  • 1/8 tsp
    pepper

How to Make Balsamic Grilled Chicken Salad

Step-by-Step

  1. Mix all ingredients for marinade and combine with chicken. Marinate for at least 1 hour.
  2. Grill chicken and chop into bite size pieces.
  3. Combine ingredients for salad and dressing. Pour over grilled chopped chicken and mix well. Serve on kieser rolls.
  4. Can be made a day ahead. Before serving if it seems a little dry add a bit more mayo.
