Don't let the amount of garlic in this chicken dish scare you away... The flavor isn't at all overwhelming. We were actually surprised at how mild it was. Once baked, the chicken is juicy and flavorful. Thyme, sage, and bay leaves are classic roast chicken seasonings, but you can easily mix up the seasonings.

Ingredients For 40 garlic chicken

  • 40 clove
    garlic
  • 1
    chicken, cut up
  • 1/2 c
    dry white wine
  • 1/4 c
    olive oil
  • 1 tsp
    thyme
  • 1/2 tsp
    sage
  • 1 Tbsp
    minced parsley
  • 4 sm
    bay leaves
  • 1 tsp
    salt
  • 1/4 tsp
    pepper
  • aluminum foil
  • French bread loaf

We've also had success using chicken breasts in this dish rather than a whole chicken that's been cut up. Feel free to adjust to your chicken preference.
  • Garlic in the bottom of a Dutch oven.

    Peeling garlic is optional. Place garlic in the bottom of a heavy Dutch oven with a tight lid.
  • Chicken pieces on top of the garlic.

    Place chicken on top of garlic in the Dutch oven.
  • Wine and olive oil poured over chicken.

    Pour wine over the chicken. Drizzle olive oil over the chicken.
  • Spices added to the Dutch oven.

    Mix the spices together. Sprinkle over the chicken. Place bay leaves among chicken pieces.
  • A lid and aluminum foil on the Dutch oven.

    Cover pan with foil. Cover foil with the lid.
  • Baking the chicken.

    Bake in an oven preheated to 350 degrees for 1 hour. Do not remove the foil or lid until done Serve with French bread.
