My daughter likes avocado soup about the best and since she took the last 6 servings to the cottage yesterday and it is a cool rainy day I decided to make some more avocado soup. Since I do not drive anymore and only had 2 avocados, I decided to look into the refrigerator and found asparagus and apples and combined all of these...hope she likes it when she gets home tonight. I have posted the original avocado soup a couple of weeks ago.

Ingredients For triple "a" soup

  • 2 lg
    avocados
  • 2 lg
    apples
  • 24 stalk
    asparagus
  • 5 c
    chicken or vegetable stock
  • 1 c
    water
  • 2 md
    onions chopped
  • 3 clove
    garlic...minced
  • 2 tsp
    wasabi paste
  • 2 Tbsp
    fresh lime juice
  • 1 Tbsp
    chopped fresh basil
  • salt and pepper to taste

How To Make triple "a" soup

    Wash asparagus and snap off the ends. add these to a stock pot with the water and cook for 15 minutes...save the water and discard the asparagus ends,,,these add additional flavor to the soup and are not edible as they are toooo tough discard them but keep the water and add the chicken stock to the pot..In small frying pan saute the onions and garlic in a tablespoon of butter until tender 5 minutes...pour the onions into stock pot along wjth the chopped avocado and apples and the asparagus spears.

    Simmer and add the lime juice, wasabi and basil and simmer for 30 minutes.

    Remove from stove let cool slightly and puree the contents....serve with croutons or a dollop of cream...the soup freezes very well. I freeze in containers of one or two servings and when frozen I put them in baggies to give me more room in the freezer...my daughter calls me Mrs Kitchen since I stopped driving and am home unless a friend or neighbor calls and away I go..otherwise I am in the kitchen and what else is there to do but cook, bake, knit and play scrabble on the computer..
