1 lgonion, diced

2 cdiced potatoes

1 cdiced celery

1 csliced zucchini

1 ccut green beans

2 cshredded cabbage

4 cbeef broth

2 cwater

2 cpeeled tomatoes

1 can(16 oz.) cannellini beans

1/2 lbsmall shell pasta

chopped parsley and basil, optional

salt and pepper, optional
How To Make vegetable minestrone soup

1Saute garlic and onion. Add potatoes and celery, cook for 5 minutes Add broth and 2 cups water, bring to a boil. Add tomatoes and simmer for 10 minutes Add zucchini, beans, and cabbage. Bring to a boil. Add parsley, basil, and beans. Simmer 10 minutes

2Stir in pasta and cook 8 to 10 minutes. Season with salt and pepper to taste.

3Let stand 5 minutes before serving. Garnish with grated cheese.
