This is a great soup to have for dinner with a salad and some crusty warm bread! I love taking the leftovers to work for lunch the next day! mmmmmmm!

Ingredients For maureen's baked potato soup

  • 4 lg
    baking potatoes
  • 2/3 c
    butter
  • 6 c
    milk
  • 4
    green onions, chopped
  • 12 slice
    bacon, cooked and crumbled
  • 1 c
    sour cream
  • 1 1/4 c
    shredded cheddar cheese
  • 2/3 c
    all purpose flour
  • salt and pepper to taste

How To Make maureen's baked potato soup

    Bake potatoes. Cut in halves and scoop out pulp.

    Melt butter in large pot over low heat. Add flour. Cook until smooth, stirring constantly.Add milk. Cook over medium heat until thick and bubbly.

    Add salt, pepper, potato pulp,2 tablespoons of the green onions, 1/2 the bacon and 1 cup of the cheese. Cook until heated through. Stir in sour cream.

    Serve topped with remaining green onions, bacon & cheese.

    The prep time in this dish is so long because of the baked potatoes, but you can really shorten the time by microwaving them. :-) IDO!
