2 lbcarrots, peeled and chunked

1ginger, 2x1" piece cut into matchsticks

3 cvegetable broth

How To Make carrot soup

1In larger saucepan melt butter and add carrots. Gently saute carrots and ginger.

2Add vegetable broth and cook until carrots are softened, about 25 minutes.

3Pour mixture into a food processor and puree.

4Season with salt and pepper and add the juice and zest of the orange.

5Serve hot or cold.
