My whole family loves this! If all the young grandkids are going to be visiting, I don't make it as spicy. I really surprised everyone with my secret ingredient of spaghetti sauce!! I prefer it to tomato sauce or salsa because of the great texture and flavor. I love the chunky vegetable sauce. If it is only adults, I add about 1 cup of medium salsa.

Ingredients For gramma's enchilada casserole

  • 2 can
    jalapinto beans
  • 2 lb
    hamburger meat
  • 1 c
    onion, chopped
  • 1 c
    green chiles, chopped
  • 1 can
    spaghetti sauce, chunky vegetable
  • 1/3 c
    red chili powder
  • 1 Tbsp
    minced garlic
  • 2 can
    green chile enchilada sauce
  • 1/2 c
    salsa, chunky (optional)

How To Make gramma's enchilada casserole

    Brown the hamburger meat in a medium stock pot then add onions and garlic and saute for a couple of minutes. Stir well so it does not stick to the pot.

    After the meat is browned and onions are slightly transluscent, add green chiles, spaghetti sauce, soup and chili powder. Mix well and heat to bubbling and add green chili enchilada sauce.

    Crumble tortilla chips coarsely and stir into meat mixture. Heat to bubbling, turn off heat and cover.

    You can serve straight from pot or place in casserole dish and cover with grated cheese and pop in 350 degree onion until cheese is melted and bubbly. Serve with extra chopped onions, chopped green chiles, grated cheese, salsa and sour cream.
