This soul-warming soup is adapted from a classic recipe given to me years ago by a friend in Canada.the simplest things are the best!

Ingredients For 'french onion soup'

    stick margarine
  • 1
    onion,chopped
  • 2 1/2 cups
    beef broth
  • 2
    ounces french bread,cut into two slices and toasted.
  • 1/2 cup
    shredded mozzarella cheese

How To Make 'french onion soup'

    Preheat broiler. in a med saucepan,melt margarine.Add onion cook, stirring as needed,until softened,about 5 min.Add broth; bring to a boil.Reduce heat and simmer,uncovered,until the onion is very tender.

    Place one slice of toast in each of two flameproof soup bowls;pour soup over toast.sprinkle each with cheese and broil until the cheese is melted and lightly browned. about 1 min .serve at once.
