white bean patty-cakes

I was thinking about something to munch-on while on the computer. I came up with this. You can eat it as a snack or appetizer or you can eat it as a side. If you eat it as a appetizer, or a snack, you can use a sauce (I used Kraft creamy Horseradish sauce). My wife thought it was very good.

Ingredients For white bean patty-cakes

  • 1/2 lb
    great northern beans, cooked and drained and smashed or 2 cans (15-oz each) of great northern beans, drained and smashed
  • 2 lg
    eggs
  • 1 tsp
    salt
  • 1 tsp
    pepper
  • 1/2 c
    onion, finely chopped
  • 1/2 tsp
    red pepper flakes
  • 1/4 c
    parmesan cheese, grated
  • 2 Tbsp
    self rising corn mill
  • 1/3 c
    self rising flour
  • 2/3 c
    vegetable oil
  • kraft creamy horseradish sauce (optional)

How To Make white bean patty-cakes

    Take the beans and drain them.
  • 2
    Smash the beans with a fork.
  • 3
    Get the rest of the ingredients ready.

    Combine all ingredients except for oil in a medium size bowl.

    Mix well until consistency has been reached. You may have to add a little more flour. Place oil in a large skillet and heat on medium high.

    Take and form a patty about the size of a hockey putt.

    Place patties into hot skillet.

    Cook one side (about 8-10 minutes)until brown, flip over gently try not to break them, and cook (about 8-10 minutes) until brown.

    Remove from skillet and place them on a paper towel lined plate. If you are eating them as a snack, place creamy horseradish sauce in a small bowl. Place on a small plate alone with white bean patties and enjoy. Also great as a appetizer with sauce, or as a side dish with fry fish.
