1/2 cflour

1/2 cyellow corn meal

1 1/2 tspbaking powder

2 tspsugar

1/2 tspsea salt

2/3 cmilk

1/4 cbutter, melted

2 cwhole kernel corn, fresh or if frozen; rinsed and drained

3green onions, chopped

1/4 cvegetable oil, plus more for frying

2 cfresh salsa
How To Make corn fritters with salsa

1In a large bowl, mix flour, cornmeal, baking powder, sugar and salt; set aside. In another bowl, whisk eggs with milk, melted butter, corn and green onions until mixed. Add milk mixture to the flour mixture; stir just until dry ingredients are moistened.

2In large skillet, heat 1/4 cup oil over medium heat. Drop tablespoonfuls of batter into fryer; cook until golden on both sides, turning once. Add more oil to pan if necessary.
