Just as good as sweet potato casserole if not better. Try it for yourself!! Very yummy!!!! One of my favs at Easter.

Ingredients For carrot casserole

2 lbs. carrots, cooked and drained

2 sticks butter

2 cups sugar

6 eggs

2 teaspoons baking powder

6 tablespoons flour

2 teaspoons vanilla
How To Make carrot casserole

1Combine carrots and butter in food processor. Combine flour and baking powder, then mix all ingredients in mixer.

2Pour into 13x9 baking dish, and bake at 350 for 45 minutes to 1 hour.
