twice baked potato casserole
All I can say is that it was a huge hit with my guys at the dinner table. I made it a couple of weeks ago and they are already requesting it again. The prep time seems like a lot but that is basically baking the potatoes and frying the bacon. This step can be done the day before.

Cheesy and full of bacon, this side dish casserole is amazing. It has all the flavors of a loaded potato, just in casserole form. You can serve this at a cookout alongside steaks and burgers. It would be delicious alongside baked chicken too. If you want a more buttery taste, use Yukon Gold potatoes.

Ingredients
- 7 medium red potatoes, baked
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 pound bacon, cooked and crumbled
- 3 cups sour cream
- 2 cups mozzarella cheese, shredded
- 2 cups cheddar cheese, shredded
- 3 - green onion, sliced
How To Make twice baked potato casserole

Step 1Cut baked potatoes into 1-inch cubes.

Step 2Grease a 13 x 9 baking dish.

Step 3Place half the potatoes in a greased baking dish.

Step 4Sprinkle with half the salt, pepper, and bacon. Top with half the sour cream.

Step 5Then top with half of the mozzarella and cheddar cheeses. Repeat the layers - salt, pepper, bacon, sour cream and cheese.

Step 6Bake uncovered at 350° for 20-25 minutes or until cheeses are melted.

Step 7Sprinkle with the sliced green onion.
