The kids loved the first "sandwich", then when they asked for the second one, they pulled the tomato off. I was just happy that they ate the first one with no complaints!! Very tasty!

Ingredients For louisville hot brown

  • 2 Tbsp
    light butter
  • 2 Tbsp
    flour
  • 1 1/2 c
    1% milk
  • 1 c
    white cheddar cheese
  • 1/4 c
    parmesan cheese
  • 1 1/2 Tbsp
    dijon mustard
  • 1/2 tsp
    tabasco sauce (i used frank's hot sauce)
  • 1/2 tsp
    salt
  • 6 slice
    bacon (i used turkey bacon)
  • 6 slice
    ciabatta or other rustic bread, toasted (i used lite texas toast)
  • 1 lg
    tomato
  • 1/8 tsp
    ground pepper
  • roasted turkey breast

How To Make louisville hot brown

    I roasted an 8 lb. turkey breast at 325* with some butter and my seasonings (salt, pepper, garlic powder & onion powder) for about 4 1/2 hours til it reached 180* with a meat thermometer.

    To make the cheese sauce: melt butter over medium heat. Add flour and cook mixture, stirring constantly for 3 minutes. Add milk and continue to stir. Increase heat to medium high heat and bring mixture to a boil. Cook for another minute. Remove saucepan from heat and whisk in cheeses, mustard, hot sauce & salt. Cover & keep warm.

    Cook the bacon, once cool, crumble or chop.

    Because I used Texas Toast, I cooked the toast in the oven turning once to "toast" both sides before the last step. I also broiled the sandwiches on a cookie sheet.

    Put together the sandwiches: Preheat oven broiler. In a large ovenproof dish, arrange toasted bread slices and layer them with turkey and tomato slices. Sprinkle with pepper and spoon cheese sauce on top. Place the sandwiches under broiler and cook until sauce begins to brown lightly, 2-3 minutes. Remove from oven, sprinkle with bacon and serve immediately.
