Ingredients For 4-cheese enchiladas

  • 2 c
    shredded 4-cheese mexican, divided
  • 1/2 c
    salsa
  • 1/4 c
    fresh cilantro, chopped
  • 1 1/2 tsp
    ground cumin
  • 8
    6-inch flour tortillas
  • 10 oz
    enchilada sauce, canned
  • sour cream (optional)
  • tomato, chopped (optional)
  • avocado, chopped (optional)

How To Make 4-cheese enchiladas

    Combine 1.5 cups of cheese, salsa, cilantro and cumin in medium bowl.

    Spoon 1/4 cup mixture down center of each tortilla. Roll up; place seam-side down in greased 11 x 7-inch baking dish. Spoon enchilada sauce over enchiladas.

    Cover with foil; bake in preheated 350*F oven 30 minutes or until hot.

    Uncover; Sprinkle with remaining cheese. Let stand 5 minutes or until cheese is melted. Top with sour cream, chopped tomato and avocado, if desired. Refrigerated any leftovers.
