This shrimp dish was created at the famed 5 star resort, the Boca Raton Hotel and Club. I was given the recipe by a gourmet chef in the Top of the Tower Restaurant.

Ingredients For scampi boca

  • 6 lg
    shrimp per person
  • olive oil, light
  • 2 tsp
    butter
  • 1/4 c
    brandy
  • 1/2 tsp
    minced garlic
  • 2 c
    heavy cream
  • salt and white pepper to taste

How To Make scampi boca

  • 1
    Sauté the shrimp in light oil and 1 teaspoon butter. when the shrimp are half cooked, add the brandy, garlic and cream.
  • 2
    Reduce the cream by 1/2, and add 1 teaspoon butter and blend thoroughly. Add salt and white pepper to taste.

    Serve with cooked saffron rice
