We all really enjoy this tasty dish! Kotleti is a Russian dish that's similar to a cutlet or Salisbury steak. They're usually made with ground beef, pork or chicken. And this recipe is for a chicken version. The coarser breadcrumbs (like Panko) work best in this recipe, but you can use finer bread crumbs if you cannot find coarse breadcrumbs. Sometimes, I use 1 1/2 pounds of ground chicken so I'll have a few leftover Kotleti that I use to make sandwiches the next day (using hamburger buns or Kaiser rolls--it makes such a great sandwich).

Ingredients For chicken kotleti

  • 1 cup
    coarse breadcrumbs)
  • 1/3 cup
    low-fat milk
  • 1 lb
    ground chicken
  • 1 tsp
    dried parsley
  • 2 Tbsp
    low-fat sour cream (plus more for garnish, optional)
  • 1 tsp
    salt
  • 1/2 tsp
    black pepper
  • 1
    egg
  • 1 sm
    onion, grated (i usually mince instead of grate)
  • 1/2 c
    all-purpose flour
  • 2-3 Tbsp
    canola oil (or more, if needed)

How To Make chicken kotleti

    Combine breadcrumbs, milk, chicken, sour cream, parsley, salt, pepper, egg and grated onion, and mix well. Divide into 12 balls, then form each meatball into a pattie.

    Dredge each pattie in the flour, being sure to coat both sides well with a light dusting of flour.

    Preheat oil in large skillet. Place patties in preheated skillet. Cover skillet, and cook until lightly browned on both sides, about 5 minutes on the first side and 3 minutes on the next. Add more oil as needed.

    Serve hot, topped with a dollop of sour cream (optional).
