I enjoy this Pecan-Crusted Chicken because I love nuts for both the texture and the flavor that they give to a dish. Using pecans in the coating instead of cornmeal or breadcrumbs adds more crunch as well as a hint of southern style. Although for this Pecan-Crusted Chicken we usually use chicken breast you could also use this with legs and/or thighs plus it works with pork.

Ingredients For pecan chicken

  • 1/3 c
    pecans, coarsely chopped
  • 1/3 c
    dried bread crumbs
  • 1/2 tsp
    dried thyme
  • 1/2 tsp
    paprika
  • 1/2 tsp
    salt
  • 4
    boneless chicken breast halves
  • 3 Tbsp
    dijon mustard

How To Make pecan chicken

    In a shallow bowl, combine the pecans, bread crumbs, thyme, paprika and salt. Coat chicken with mustard, then with pecan mixture. Place in a greased 13x9 inch baking pan.

    Bake, uncovered, at 375 degrees for 30-35 minutes or until chicken juices run clear.
