Ingredients For cajun smothered chicken

1chicken, cut into serving pieces

salt, black pepper and cayenne pepper, to taste

1/2 cvegtable oil

1 lbof fresh pork sasage

3 lgonion chopped

1 lgbell pepper, chopped

4stalks of celery, chopped

2 tspof garlic powder
-
2 cwater
-
1/2 cchopped green onion tops

1/2 cchopped parsley
How To Make cajun smothered chicken

1Season chicken with slt, black pepper and cayenne pepper, brown chicken in hot oil in a heavy skillet and remove from skillet when brown.

2Brown pork sausage in oil, remove from skillet and cut into 1 1/2-inch pieces. Remove most of the oil from the skillet and add onion, bell pepper and celery: cook until onions are transparent. Add pork sasage, chicken and garlic powder to skillet with onions; slowly add water , cover and simmer 30 to 40 minutes. add green onion tops and parsley just before serving: serve over hot rice.
