Ingredients For oat peaches and cream muffins

1 cflour

3/4 cquick oats

2/3 cplus 1 tablespoon firmly packed brown sugar, divided

1/3 coat bran

2 1/2 tspbaking powder

1 tspcinnamon

1/2 clow fat cream cheese

1 cpeeled, chopped peaches, divided (about 2 peaches)

1 cskim milk
-
3 Tbspvegetable oil

2 tspvanilla extract

1 lgegg

1/3 ctoasted, chopped walnuts
How To Make oat peaches and cream muffins

1Preheat oven to 350 degrees F. and spray 12 muffin tins with non-stick cooking spray.

2Combine flour, oats, 2/3 cup brown sugar, oat bran, baking powder and cinnamon in a medium bowl; mix well and set aside.

3Stir together cream cheese and the reserved 1 tablespoon brown sugar. When well blended, fold in 1/4 cup peaches.

4Add milk, oil, vanilla and egg to dry ingredients, mixing just until dry ingredients are moistened. Lightly stir in remaining peaches and walnuts. Spoon 3/4 of the mixture into prepared muffin tins. Place a teaspoonful of the cream cheese mixture in the center of each; spoon remaining batter over the top.

5Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
