Received this recipe from someone at a family BBQ about 50 years ago and have been making it ever since. It's moist. I don't use the frosting but sometimes sprinkle with powdered sugar.

Ingredients For carrot cake

  • 1 1/3 c
    oil
  • 2 c
    sugar
  • 3
    eggs
  • 2 c
    flour
  • 1 c
    walnuts - chopped
  • 2 tsp
    baking soda
  • 2 tsp
    vanilla
  • 1 tsp
    salt
  • 2 c
    shredded carrots
  • 1/2 c
    crushed pineapple
  • 2 tsp
    cinnamon
  • CREAM CHEESE FROSTING
  • 1/2 lb
    cream cheese
  • 1 1/4 c
    powdered sugar
  • 1/4 c
    walnuts chopped
  • 1 stick
    margarine
  • 1/2 c
    crushed pineapple (drain juice)

How To Make carrot cake

    Combine all ingredients in a bowl and mix well. spread in a 9x13 greased pan.

    Bake in 350 degree oven about 45-50 minutes. (I usually check at 45 minutes and then every 5 minutes...sometimes it takes 50-60 minutes depending on your oven)

    For the frosting, blend margarine and cream cheese well. Add sugar and mix. Then add nuts and pineapple. (this frosting recipe came with the cake recipe, but I don't use it.)
