These are my personal favorite cookies. The original recipe is not mine but I have adjusted it over the years to make it my own. It is crisp with lots of flavor.

Ingredients For loaded oatmeal cookies

1 cbutter flavored shortening

1 clight brown sugar, firmly packed

1/2 cwhite sugar

2large eggs
-
1 1/2 cunbleached white flour

1 tspbaking soda
-
1/2 tspsalt
-
1 tspcinnamon

3 cold fashioned oats
-
1/2 cgoldnen raisins
-
1/2 cshredded and chopped coconut
-
1/2 cnuts chopped (your favorite)

1 tspvanilla extract
How To Make loaded oatmeal cookies

1Cream shortening, sugar, eggs and vanilla. Sift flour, baking soda,salt and cinnamon together. Add slowly to wet ingredients. Add rolled oats 1/2 cup at a time. add remaining ingredients being careful to mix throughly.

2Divide into 3 equal and form into logs. Wrap in wax paper or plastic wrap and put in freezer at least 4 hours. Cut 12 1/4 inch slices per baking sheet. Bake for 10 - 12 minutes.

3Returning unused portion to freezer until ready for next baking cycle or until needed. May be stored in unbaked in an air tight container up to 2 months.
