I work at the High School and this is one of the cakes we make, So i cut the recipe down to a smaller one. It was wonderful.

Ingredients For harvest cake

  • 2 c
    granulated, sugar
  • 2 c
    oil, vegetable
  • 2 1/4 c
    flour (all purpose)
  • 2 1/8 tsp
    cinnamon
  • 1 3/4 tsp
    allspice, ground
  • 1 1/2 tsp
    baking powder
  • 3/4 tsp
    baking soda
  • 3/4 tsp
    salt, table
  • 2 1/4 c
    sweet potato, canned mashed
  • 3
    eggs
  • 1/3 c
    water, cold
  • 1 Tbsp
    water, cold
  • 1 1/2 tsp
    vanilla extract
  • 3/4 c
    powered sugar
  • 1 Tbsp
    water, hot
  • 1 5/8 Tbsp
    water, hot
  • 1/8 tsp
    vanilla extract
  • 2 3/8 tsp
    butter
  • 2 1/8 tsp
    honey

How To Make harvest cake

    Preheat oven to 350, Spray or butter pans
  • 2
    In a large mixing bowl mix oil,granulated sugar, and eggs

    Mix all dry ingredients together, add dry ingredients slowly to oil mixture. Beat

    Add water and Vanilla mix until well blended.

    GLAZE: Mix together powered sugar, hot water, vanilla extract, butter, and honey until well mixed.

    Pour glaze over cake while warm
