This is a great recipe to make for Super bowl... this recipe is from Cupcakes,Cookies, and Pie ,Oh My! This is so quick and simple to make you will want to make more than one and will be asked for the recipe-- so have plenty printed up and handy-- great for that summer backyard BBQ too! Ingredients For game day nacho cheesecake

  • CHEESECAKE:
  • 2 pkg
    8 oz. each cream cheese, softened
  • 2/3 + 1/4 c
    granulated sugar
  • 1 tsp
    grated lemon zest
  • 2 Tbsp
    lemon juice
  • 1 tsp
    vanilla extract
  • 3 lg
    eggs, room temperature
  • yellow and red food coloring
  • 1/2 c
    dairy sour cream
  • FOR CHIPS:
  • 1 pkg
    refrigerated pie dough
  • 1 Tbsp
    milk
  • 2 Tbsp
    granulated sugar
  • all purpose flour, for dusting
  • FOR SALSA AND GARNISHES:
  • 8
    gummy swedish fish
  • 1 c
    low-sugar strawberry jam
  • 3
    pieces (strands) green licorice twist(david and harry's have it)
  • 6
    black licorice dots
  • 3 Tbsp
    dairy sour cream
  • yellow and red food coloring
  • 3 Tbsp
    chocolate covered raisins

How To Make game day nacho cheesecake

    Cheesecake: Beat cream cheese with mixer until smooth. add 2/3 cup sugar, the lemon zest, lemon juice, and vanilla; beat well. Beat in eggs one at a time. Tint the batter orange with yellow and red food coloring.

    Spray a 9-inch pie plate with cooking spray. Pour batter in pan; bake at 350^ until puffed and almost set about 25-30 minutes. Mix sour cream and remaining sugar; spread over the hot cheesecake and bake 5 minutes more.Let cool, then chill for 2 hours.

    Chips: Unroll the pie dough on a lightly floured surface and roll it out to flatten slightly. Brush the dough with the milk and sprinkle with the sugar. Cut the dough into 2 1/2 inch wide strips. Cut each strip into as many 2 1/2 inch triangles as possible. Place the triangles about 1 inch apart on 2 parchment lined baking sheets. Bake in batches at 450^ until lightly golden about 7 to 10 minutes. Transfer to a cooling rack.

    Salsa and Garnish: Cut the Swedish Fish into 1/2 inch pieces and toss with 2 Tablespoons strawberry jam. For the chiles- cut the green licorice on the diagonal into 1/8 inch slices. For olives-cut the black dots into 1/4 inch thick rounds. Use a small straw or pastry tip to remove a circle from the center of each round. Tint the sour cream orange- with yellow and red food coloring to look like melted cheese. Spoon the orange cream into a resealable plastic bag. Press out excess air and seal. Press pie chips into the cheesecake. Add the black licorice, chocolate-covered raisins and some green licorice and jam-coated Swedish fish.

    Snip a small corner from the bag of orange sour cream and pipe a few dots on the cheesecake for the melted cheese. Serve with the extra chips on the side, and make extra salsa by mixing leftover candies and jam.
