Ingredients For california cake

  • 1 pkg
    (1 lb. 1 oz.) pound cake mix
  • 2
    eggs
  • 3/4 c
    sour cream
  • 1 can
    (1 lb. 13 oz.) apricot halves, drained
  • TOPPING:
  • 1/2 c
    softened butter
  • 1/4 tsp
    salt
  • 1 c
    sugar
  • 1 1/2 c
    ground almonds
  • 1 tsp
    pure almond extract

How To Make california cake

    Prepare cake mix with eggs as the label directs, but substitute sour cream for the milk.

    Turn batter into a greased and floured 9 x 13 pan. For topping, use a pastry blender or mixer and combine the butter, salt, sugar, almonds and almond extract until moist and crumbly. Set aside.

    Drain the apricots well and chop coarsely. Top the batter with the apricots and sprinkle with the crumbly mixture.

    Bake at 350 for 45 minutes or until cake tests done. Cool and cut into squares. Serve slightly warm if you wish.
