This recipe is adapted from a basic waffle recipe taken from an older BH&G recipe book. My husband & I like things a little spicy, so I have incorporated cinnamon & cloves into recipe...I usually do not measure these spices exact....just kinda "eyeball" it when I add these. Sometimes I also add nutmeg, depending on my mood.

Ingredients For boy-howdy banana pecan waffles

  • 1 md
    very ripe banana, peeled
  • 1 1/2 c
    all purpose flour, sifted
  • 1 1/2 tsp
    baking powder
  • 1 1/2 Tbsp
    granulated sugar
  • 1/2 tsp
    cinnamon
  • 1/8 tsp
    clove, ground
  • 1/2 c
    pecans finely chopped
  • 1 1/2 c
    milk, 2%
  • 1
    egg, lightly beaten
  • 1/4 c
    vegetable oil

How To Make boy-howdy banana pecan waffles

    Place peeled ripe banana in medium mixing bowl (one that holds about 6-8 cups). With fork, mash banana. In same bowl add rest of ingredients as listed above. Mix everything in bowl with large spoon, just until mixed. Don’t over mix, mixture may be slightly lumpy, just make sure all dry ingredients are mixed in. Preheat waffle iron to temperature, following the machines instructions. (I set mine on medium heat, crispy exterior, moist interior). Each waffle iron will use different amounts of batter. My 8 inch round holds about 3/4 cup batter. After baked to desired doneness…remove from waffle iron with fork and place on plate. Serve it up with butter, syrup (I use sugar free syrup), optional additional fruit on top (blueberries, sliced strawberries, and/or raspberries….whatever suits your fancy) Top it off with Reddi Whip. Take a bite and say mmmmmm Boy Howdy, that’s good!
