I actually got this off the back of a bag of cornmeal, but my kids liked it so much I had to convert the measurements to make more than 8.

Ingredients For cornbread muffins

  • 1/2 c
    yellow cornmeal
  • 1 1/2 c
    all purpose flour
  • 3/4 c
    sugar
  • 1 tsp
    salt
  • 3 tsp
    baking powder
  • 4 1/2 Tbsp
    vegetable oil
  • 2
    eggs
  • 3/4 c
    milk

How To Make cornbread muffins

    Preheat oven to 400°F.

    In a medium bowl, thoroughly mix together cornmeal, flour and baking powder.

    Blend oil, egg, and milk together and add the dry ingredients.

    Stir until dry ingredients are just moistened.

    Fill greased muffin pan 2/3 full and bake 20-30 minutes.
