I wanted a vegetable side dish that was not potato. I had a cauliflower in the fridge, so, a couple of experiments later...These can be served with a little sour cream or applesauce, but I love 'em plain.

Ingredients For scotts caulifritters

1 lgcauliflower

1 mdvidalia onion

1 call purpose flour

1 tspbaking powder
-
2 lgeggs
-
1/4 cfavorite italian salad dressing

3 Tbspgrated parmesan/romano cheese

1/4 cchopped bacon or bacon bits

1 dashsalt & pepper
-
1 dashbasil & oregano
How To Make scotts caulifritters

1Steam cauliflower till almost tender. Using food processor or blender process cauliflower to a course sand like texture. Put in large mixing bowl.

2Next process raw onion with food processor to very fine texture, add to bowl. Add remaining ingredients and mix well. Should have the consistency of wet cement, thick and pasty, but not runny.

3Heat enough olive oil or butter to cover the bottom of a frying pan over medium-high heat. Drop heaping tablespoons of cauliflower mixture into the hot oil; fry until golden brown, about 3 minutes per side.
