There is a door that fits perfectly into the opening. Once the meat is wrapped, soaked in water and placed inside, in, the door is put in place and good ol' regular field mud is stacked against it. The same is done to the chimney hole.

For baking bread, of course, you don't mud the openings. Just use the door.

Where do you get the mud and is it a special kind of mud you need to seal the horno? I'm now fascinated by this whole process.

Norene, it's just the angle of the camera. Flame was pouring out of the opening and I just thought the way the picture just caught part of it was interesting. Here's a shot from the front:

Is that trees growing right out the top? Or smoke stacks that are just behind the leaves of other trees?

LOL! Actually the horno is being heated up and there is a raging fire inside. With the door off, the fire does look like it's out of control, but in reality, everything is just fine. We appreciate your concern, though, Sharon!
