Kimmi: I just posted a comment on Crystal's thread re: her Roasted Pumpkin Soup. I told everyone how I am also roasting the seeds to my pumpkin.
Looked up your recipe and cracked up! I told the ladies how pumpkin seeds are full of protein, magnesium and zinc. Added that the seeds are also low in cholesterol and sodium!
Your recipe looks killer. HAHAHAHA. (A little joke, there.) I will try mine with olive oil and smattering of garlic, and try your butter, salt combo next time. Thanks for posting this.
