This is alot of work but very good. It is very sweet. I keep the dough in the refrigerator overnight and it get stiff but still having a hard time rolling it out. It sticks on the table even if I'm using a pastry mat to roll the dough and flour. I rolled the dough into an inch ball and rolled it individually into a disc. I put the filling in the middle and pinch the edges. This expand quite a bit. I did not put any icing since it is very sweet already. It is chewy and really good cookie. Thank you for sharing your grandpa's favorite cookies.

I tried to make this today. I cut the recipe in half and end up using more than 5 cups of flour and still dough is way too soft. Too much liquid and There is no way you can roll this out. I put mine in the refrigerator to rest overnight and hopefully it get a little firm to roll tomorrow. The addition of jello is so good.
